Pumpkin Spice Almonds
This past weekend, I had the pleasure of joining a few friends and ride a hard cider train, near the base of Mount Rainier, on a beautiful clear day…how fall is that? Of course, that meant I had to whip up an appropriate snack in cute containers to share. Â What says fall more than homemade pumpkin spice almonds! They are so tasty and take only a few simple ingredients to make…so much better than their storebought counterparts.
Whip up a batch of these when entertaining or bring as a delicious hostess gift in a mason jar. Â They keep fresh in an airtight container for 2 – 3 weeks, so feel free to make some ahead of time and have on hand.

Pumpkin Spice Almonds
Ingredients
- 4 cups raw almonds
- 1/3 cup sugar
- 1/3 cup brown sugar
- 3 tsp pumpkin spice
- 1/2 tsp salt
- 1 egg white 3 tablespoons if using liquid egg whites
Instructions

Preheat oven to 350 degrees; place almonds in a parchment paper-lined pan and roast the almonds for 20 minutes, then let cool in pan.

In a medium mixing bowl, whisk the egg white plus 1 tablespoon of water until frothy.

Mix the salt, pumpkin spice and sugars in a small bowl, set aside.

Add the almonds to the egg white mixture and mix well, then add in the spice mixture and stir until combined.

Add the seasoned almonds back onto the baking sheet and bake for another 15 minutes, stirring once during baking.

When the almonds come out of the oven, they may not be crunchy, but they will harden as they cool.

If there are any larger pieces, break them up with your hands. Be sure and store them in an airtight container.
