Gluten-Free Caprese Pizza

If you follow my blog, you know that brunch is one of my favorite meals.ย ย With Mother’s Day around the corner, I have been contemplating the idea of hosting a brunch with a few close friends. It is a day filled with so much happiness and love, any host wants her brunch to be perfect.
One friend is gluten-free and I’m always on the lookout for tasty recipes she can enjoy. Since Simply Pulp Free Orange Juice is gluten-free, it makes the perfect complement to our quick and easy caprese pizza.

Our caprese pizza is easy to make with gluten-free dough, sliced mozzarella cheese, tomato slices and fresh basil leaves to garnish. The individual portions make it brunch perfect and are so tasty, even those without allergies will devour them.


Gluten-Free Caprese Pizza
Ingredients
- gluten free pizza dough
- 2 small vine-ripened tomatoes, thinly sliced
- 8 oz fresh mozzarella cheese, thinly sliced If you can find the mini logs, they come pre-sliced. Slice the slices in half.
- 2-3 fresh basil leaves
- olive oil
- ground pepper
Instructions

Preheat oven to your dough's instructions.

Roll your pizza dough out to about 12" wide, ยผ" thick.

Use a 3 ยฝ" round cookie cutter to cut out rounds in your dough. You will get about 8 rounds and if you re-roll your dough pieces, you can get a 9th round.

Line a baking sheet with parchment paper and add your dough rounds.

Brush each lightly with olive oil, then top with 2 slices of fresh mozzarella, and one slice of tomato.

Bake according to your dough's instructions, cooking until the tops are brown. Be sure and keep an eye on them, the cheese will bubble over the edges. Don't worry, once they cool, you can trim off the excess with kitchen shears.

Remove from oven when done and let them rest for 2 minutes.

Sprinkle pizza tops with ground pepper. Roll the basil leaves up, cut them thinly and sprinkle over the pizza tops. Remove pizzas from pan and serve warm.
