-
Preheat oven to your dough's instructions.
-
Roll your pizza dough out to about 12" wide, ¼" thick.
-
Use a 3 ½" round cookie cutter to cut out rounds in your dough. You will get about 8 rounds and if you re-roll your dough pieces, you can get a 9th round.
-
Line a baking sheet with parchment paper and add your dough rounds.
-
Brush each lightly with olive oil, then top with 2 slices of fresh mozzarella, and one slice of tomato.
-
Bake according to your dough's instructions, cooking until the tops are brown. Be sure and keep an eye on them, the cheese will bubble over the edges. Don't worry, once they cool, you can trim off the excess with kitchen shears.
-
Remove from oven when done and let them rest for 2 minutes.
-
Sprinkle pizza tops with ground pepper. Roll the basil leaves up, cut them thinly and sprinkle over the pizza tops. Remove pizzas from pan and serve warm.
