Drink Of The Week – Watermelon-Raspberry-Lemon Splash

watermelon raspberry lemon splashHere’s a tasty drink from the latest issue of Phyllis Hoffman Celebrate – Summer, hot off the presses. It’s perfect for Memorial Day festivities and a great way to kick off the summer season…recipe serves 12.

8 cups watermelon cubes, chilled
1 (1.75 liter) chilled raspberry-lemonade
1 cup chilled club soda
garnish: watermelon slices, raspberries, lemon slices

1. In the work bowl of a food processor, place half of watermelon cubes; process until smooth. Strain through a sieve into a bowl, pressing solids to release liquid. Discard solids.

2. Repeat procedure with remaining watermelon cubes.

3. In a pitcher, combine pureed watermelon, raspberry-lemonade, and club soda; serve over ice.

4. Garnish with watermelon slices, raspberries, and lemon slices, if desired. Serve immediately.

For some extra kick, you can substitute chilled sparkling wine or vodka for club soda.
