Celebrate Pi Day With Triple Berry Mini Pies
Today is Pi Day, π Day…March 14…3.14. Yes my friends, it’s my fellow math nerds’ High Holy Day, Pi Approximation Day, or Pi Day for short. So of course, it’s time to celebrate all things pi with pie so I made Triple Berry Mini Pies!
I love pie so it comes as no surprise that any day that celebrates it is number one in my book! Plus, I love making them with 5″ pie pans from Bakers Party Shop, because around these parts, cutting even slices of pie is a problem.
Seriously, I could not find the mini number cookie cutters I was looking for in time. So, I downloaded an image of pi and used it as a template to cut out of the pie tops.
What’s more fun than eating pie? Sharing with others! I boxed mine up with a wood spoon I stamped with digits of pi and secured with math washi tape! I also made fun pie labels by layering a 5 1/2″ circle of tan cardstock with a 5″ circle of purple cardstock and cutting out a wedge.
Be sure and check out your favorite pie spot or pie retailer to see if they have any special events or deals happening! Here in the Seattle area, we have lots of pie spots; many are offering a $3.14 slice of pie. Don’t forget pizza pie…local chains are having all kinds of great deals and offers.

Triple Berry Mini Pies
Ingredients
FILLING
- 1 16 oz bag frozen mixed berries (blueberry, raspberry and blackberry) other berries or combinations can be used
- 2/3 cup sugar
- 1 tablespoon flour
CRUST
- 1 box refrigerated pie crust for a 9" pie thawed and separated
- 1/4 cup sugar
- 3/4 teaspon cinnamon
- 2 tablespoons butter melted
- 3-4 5" pie pans
Instructions

Preheat oven to 425 degrees.

Combine the filling ingredients in a saucepan and bring to a boil over medium heat, stirring until thickened.

Use the top of a 5" pie pan as a template to trim out 2 circles of refrigerated pie crust for each pie; one is for the bottom of the pie, one is for the top. NOTE - One package of pie crust will yield tops and bottoms for 4 5" pies. You can get 6 circles and will need to use the pie crust scraps for the bottom of 2 pies.

Optional - Print off an image of the pi symbol, cut out and use as a stencil to trim out of the 'top' circles.

Line each pie pan with a 'bottom' circle of pie crust, pressing gently into the pie pan.

Divide filling evenly between the 4 pies.

Top each pie with a 'top'circle, pressing on the edges, and brush with the melted butter.

In a separate bowl, combine sugar and cinnamon and sprinkle over the tops of the pies.

Bake for 28 - 30 minutes on a cookie sheet. It will bubble over. Let cool before serving; top with vanilla ice cream. Store any leftover cobbler in an airtight container.
