6 Cupcake Recipe from A Store-bought Cake Mix

When just a few will do! This recipe can be doubled to make 12 cupcakes.

Ingredients

  • 1 15.5 oz box cake mix in your choice of flavor I used Betty Crocker Delights Super Moist Lemon Cake Mix
  • 1 3.9 oz box dry pudding mix ***optional*** Choose a matching flavor to your cake mix, i.e. chocolate mix/chocolate pudding. If you are using a flavor with no direct match, i.e. red velvet, use vanilla pudding.; I used Jell-O Lemon Instant Pudding Mix
  • 1 egg
  • 1/3 cup water
  • 3 tablespoons vegetable or canola oil

Instructions

  1. Preheat oven to 350°F. If you are not using traditional cupcake liners, (I used baking cups), follow their instruction for oven temperature.
  2. In a mixing bowl, add cake mix and dry pudding; mix well.
  3. You will only use 1 cup of the cake mix mixture; spoon cake mix mixture into a 1-cup measuring cup; gently tap the cup to distribute evenly the mix, and level top with knife. Pour into another mixing bowl.
  4. Add water, oil and egg.
  5. Beat vigorously by hand with whisk or mixer on low speed until thoroughly mixed.
  6. Divide evenly into 6 cupcake liners in a muffin tin. If you are using baking cups, you can just place them on a baking sheet.
  7. Bake as directed on your mix's chart for cupcakes (i.e. my mix is 12 - 17 minutes)
  8. Cool completely before frosting.

Store remaining dry mixture in an airtight container for future small-batch cupcake use!
